Giant Chocolate Chip Cookie







It has been a busy summer for me so far, a wedding and several birthdays after, baking cakes after cakes, i am all caked out, i had to make something different when Renee, a Girl Scout had a potluck.  So my daughter suggested that i baked a giant chocolate cookie, which was an excellent idea. The cookie was such a great hit with the girls and Renee said that she did not have a chance to taste it, not a crumb left on the cake carrier, they licked the platter clean.  If the cake carrier was silver, i could use it as a mirror.

Ingredients:

3/4 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
1 1/4 cups firmly packed light brown sugar
2 tbsp milk
1 tbsp  vanilla extract
1 large egg
1 3/4 cups All Purpose Flour
1 tsp salt
3/4 tsp baking soda
1 cup semi-sweet chocolate chips
1 cup coarsely chopped pecans (optional)

Method:


 Preheat oven to 375ºF.

 COMBINE shortening, brown sugar, milk and vanilla in food processor.   Pulse until well blended.

 Beat in egg and pulse until well combined..

Combine flour, salt and baking soda and add into shortening mixture until just blended.

Scrape the dough into a greased and lined half-sheet pan(draw a 12 inch circle onto the parchment paper as a guide for the cookie and lined the half-sheet pan) and stir in chocolate chips and nuts(if using).

Press the dough into a smooth circle and even layer in the pan.

Bake until lightly golden and puffy around the edges(the center should still feel quite soft 15 - 18 mins.  I baked mine for 15 mins and i turned off the oven and let the cookie remain in the oven for another 3 mins.

Remove from the oven and let cookie sit for 5 mins before removing it to a cooling rack to cool.

When cool, ice or glaze as you wish.

Buttercream:

Divide the buttercream into half, keep on portion white and use green food coloring for the other.

Make a template of the Girl Scout design out of parchment paper and use this template to aid your piping of the buttercream. (i got the Girl Scout's Logo from the internet, enlarge it to the size you desire)
