I love this type and style of chee cheong fun for breakfast and have been trying to get the texture right but have not been able to get it right until now. Now, my quest is over, i can have this type of chee cheong fun for breakfast with no fuss no muss. A piece of chee cheong fun can be made in the microwave for only 2 minutes without having to heat up a pot of water for steaming or using a crepe pan to fry which is not too bad but the underside sometimes tend to be overcooked and so will be slightly rough.
Ingredients:
1 cup cooked rice
3 cups water
1 cup rice flour
1/4 cup cake flour
1/4 cup tapioca starch
1/4 cup potato starch
1/2 tsp salt
1 tbsp cooking oil
More oil for brushing
For the Sauce
1/2 cup hoisin sauce
1/4 cup sugar
2 tbsp sesame paste
2 tbsp soya sauce
1 cup water
For the Sauce

Method:
For the Sauce:
Mix all the ingredients together and cook in the microwave for 2 minutes until sugar is dissolved and sesame paste is well combined.

For the Chee Cheong Fun Batter:
Blend 1 cup cooked rice with 2 cups water until liquified.
Mix the remaining 1 cup water with 1 cup rice flour, 1/4 cup cake flour, 31/4 cup tapioca starch, 1/4 cup potato starch and salt until well combined.
Add this to the liquified cooked rice batter and blend well.
Pass this blended batter through a fine sieve and leave overnight in the fridge (i have used the batter straight without resting and it made good chee cheong fun but resting made better ones). traditional way of steaming is good. I use 1/2 cup batter for 9 inch x 7 inch tray
Follow the instructions below on how to microwave the batter.
Use a plastic container which has a very flat base. This one is 8 inch x 9 inch |
Grease the base of plastic container |
Add 1 tbsp cooking oil and stir the batter very well before scooping a ladle full which is 1/2 cup. Remember to stir everytime you scoop the batter to make a next piece of chee cheong fun |
Pour batter into greased plastic container |
Tilt the plastic container until the base is covered with batter |
1/2 cup of batter is just right to cover the base of this plastic container |
Cover the filled plastic container with cling wrap and cook in the microwave on high for 2 minutes |
Brush the cooked chee cheong fun with oil |
Using a bench scraper, scrape the chee cheong fun out of the plastic container. Chee cheong fun is ready to be enjoyed.HOW TO SERVE:Cut up a few rolled up chee cheong fun into bite size and add in a couple of spoons of the sauce(recipe is above), i like more than a couple, the more sauce, the better. Then drizzle in a little Fragrant oil - oil used for preparing Fried Shallots. Sprinkle with roasted sesame seeds and fried shallots. If you prefer spicy, add in some chilli sauce like Siracha or Sambal Olek or better still some pickled green chilly/jalapeno. I remembered being served with pickled long beans of which i have not seen these pickled long beans for more than 50 years. I must try to make some. |

Lily, you're very hard working and adventurous with the ingredients. If you're free, you try this recipe -- Rice flour 150 gm, starch powder= ubi kayu flour - 75 gm , pulut flour - 20 gm , oil - 25 gm, water - 600 gm .
1. Mix all well and stand 10 mins.
2. Grease a tray/ pan with oil and put it in the steamer to steam for 3 mins.
3. Remove the tray and coat it with some batter, as the more batter you add, the thicker the Chee Cheong fun will be. Just batter enough to coat the tray/ pan.
4. Put it back to steam for 3 mins. Turn it over on a working surface and using scraper, scrape the chee cheong fun down.
5. Optional -- If you want to add in cooked prawns or sliced Char Siew. In Shanghai, they add in fried minced pork and fried Bong Kwong onto the batter before steaming.
6. I'm very lazy now and with great eater maids, I can't make this. If make hot dog in bun, each maid has to eat 4 for 1 meal !! If eat Chee Cheong fun, I think this recipe is just enough for 1 maid !!

ya, is it ok to use all-purpose flour and i supposed you have the bleached one otherwise it will just be a little yellowish that's all.

sesame paste is readily available in the asian stores. I have not made any at home but i supposed you could roast the sesame seeds and buzz them in the food processor with oil.

Whenever I visit your blog, I salivate...so yummy! I tried the MV version of the chee cheong fun and I find that the side becomes crusty (hard a little). I wonder if I am doing anything wrong...haiz!!!

i think the edged are overdone. perhaps your microwave is of heavy wattages, use lesser time to cook and it is a must to cover the container to catch the steam and does not dry out the cheong fun.

I have tried this recipe today but it is totally failed, my plastic container which can be microwave also can't stand the heat, I wonder why, and I thought because my microwave heat is diff so I reduced to 1min and they r not done... Now my container also Senggek,
And the first one I did was not even, some part thick and some part thin... And the taste not like chee cheong fun, my hubby said taste like rice kuih... Do. Know where went wrong?

i don't know where you went wrong, it could the wrong type of rice flour - i will only use rice flour from thailand or the batter could have been too thick. Even the cooked rice matters, i used jasmine rice and no other rice. If your plastic container is microwaveable, then it should not go senggek. I have use ice-cream tubs to cook rice in the microwave and it takes about 18 mins to cook rice and it is still ok.
