Best Ever Carrot Cake For Tatum

My Christmas was merry indeed and i would like to thank all my family and friends for all the thoughful gifts.  Thank you, Sandra, Jeremie, Renee, Alexander, Tien Hsi, Bruce, Timmy, Belinda, Wally, Coleen, Jerry, Vicky, Sammy and Kaylee.

I know this coming New Year will be a happy one cos i have already started to make Tatum happy, i hope, by baking her this best ever Carrot Cake.  Happy Birthday Tatum and Cole.

Ingredient:
6 cups grated carrots
1 cup brown sugar
4 large eggs
1 1/4 cups fine granulated sugar
1 cup vegetable oil
2 tsp vanilla extract
1 cup crushed pineapple, drained
3 cups all-purpose flour
1 1/2 ttsp baking soda
1 tsp salt
2 tsp ground cinnamon
1 cup chopped walnuts


Cream Cheese Frosting:
8 ozs Cream Cheese 2 tbsp honey
1 tbsp orange juice


Method:
Combine grated carrots and brown sugar. Set aside for 60 minutes.
Put the chopped walnuts onto a baking sheet and put in the cold oven.  Turn on the oven for preheating to 350 f.  Turn on the timer for 10 minutes, check on the walnuts at 5 minutes, give it a good stir and continue to roast for another 5 minutes.  Remove from oven and allow oven to preheat.

Line the bottom with parchment paper, grease and flour two 9 inch cake pans.

Beat eggs until light. Gradually beat in the sugar, oil and vanilla. Stir in the drained crushed pineapple.

Combine the flour, baking soda, salt and cinnamon, stir well to combine all the dry ingredients with a fork or a whisk.

Add this flour mixture into the wet mixture and stir until absorbed.

DRAIN  the carrot and then stir in to the cake batter together with the walnuts. Adjust the texture of the cake batter with the liquid that has been drained from the carrot.  The cake batter should be thick but runny - bot too runny otherwise you will have a pudding and not a cake.

Pour evenly into the prepared pans.

Bake for 45 to 50 minutes in the preheated oven, until a toothpick test comes out clean from the center of the cake.

Cool for 10 minutes before removing from pan.

When completely cooled, frost with cream cheese frosting.
Cream Cheese Frosting:
Whisk/beat cream cheese, honey and orange juice until light and soft.

Sandwich the cake with this frosting and decorate the cake as you wish.

Happy New Year Lily, your carrot cake was so pretty, you are so good of decorating the cake now !! It looked like Hotel standard !! Nothing is impossible for you !! Enjoy your New Year with your loved ones. Be Happy , Healthy and Wealthy always.
